Sponge lady fingers
Homemade lady fingers for tiramisu

  1. 3 eggs (separated) at room temperature
  2. 70g sugar
  3. 1 tsp. vanilla extract
  4. ½ cup flour
  5. Pinch of salt
  6. 1/4 tsp cream of tartar
  1. Preheat oven to 200 °C. Prepare a tray lined with parchment paper.
  2. In a bowl of a stand mixer with paddle attachment, beat egg yolks and half of the sugar, until pale and thick. Add vanilla and beat to mix. Sift flour and salt together and set aside.
  3. In a clean bowl, beat egg whites with whisk attachment fitted.
  4. Once eggs are frothy, start adding remaining sugar and beat on high speed until sugar runs out. Beat a further few seconds until stiff peaks form.
  5. Fold the flour in to the egg yolk mixture without knocking too much air and then fold in the egg whites as well.
  6. Final batter should hold its shape.
  7. Pipe on to the prepared tray and bake until fingers are golden brown and released from the paper.
