Savoury shortcrust pastry
Perfect for savoury tarts.

  1. 250g flour
  2. 125g butter
  3. 1 egg cold
  4. 1 cup grated parmesan cheese (optional)
  5. Pepper & garlic powder (optional)
  1. Rub the butter and cheese through flour in a large bowl until it represents bread crumbs.
  2. If you like now is the time to add some pepper or garlic powder or both.
  3. Break the egg in to the centre and work until dough comes together.
  4. Take the dough out on to a floured surface and knead lightly for few seconds, just until dough becomes a ball without any pieces falling apart.
  5. Wrap in a cling wrap and place in a refrigerator for at least 30 minutes to rest (overnight is the best).
  6. Once out of fridge, roll out the dough on a floured surface and use as desired.
  1. Makes enough pastry to layer a 12 inch round quiche pan.
