Perfect shiny royal icing

- 3 cups icing sugar
- 1/4 tsp. cream of tartar
- 2 egg whites
- Put all above ingredients in a mixer and beat over low speed until everything is combined.
- Then turn the mixer to high speed and whip the mixture until it becomes thick, white and glossy. Scrap out the icing mixture in to a bowl and cover with cling wrap.
- Thin out as desired.
- Refrigerate covered for up to 2 weeks.
