Lemon shortbread cookies

My favourite recipe for morning tea and sometimes breakfast.A nice melt-in-the mouth shortbread is an ideal treat to accompany a morning tea. It’s so sweet that it can be eaten on its own or if preferred sandwich two cookies using a favourite filling. It can be butter cream, strawberry/raspberry jam, or chocolate ganache.

The usual 3:2:1 (flour:butter:sugar)ratio gives a sweet smooth cookie. So I changed this ratio a little bit, by reducing the sugar and butter to create a less sweet cookie. So I can sandwich them using a sweet filling. I’m using lemon pastry cream here.

Lemon shortbread cookies

I created the lemon cream by mixing lemon curd with basic pastry cream. You can decide how much lemon curd to use depending on how sweet or how tangy you’d like the filling to be.

Ingredients
  1. Preheat oven to 210 Celsius. Line a tray with baking paper.
  2. 300g biscuit flour
  3. 175g butter
  4. 75g sugar
  5. 1 egg
  6. Zest of 1 lemon
  7. ¼ cup lemon curd
  8. 1 cup of pastry cream
Instructions
  1. Preheat oven to 170 °C.
  2. Prepare a baking tray lined with a baking paper.
  3. Place biscuit flour in a bowl.
  4. Cube butter (still cold) and add in to the flour.
  5. Rub butter in to flour and halfway through, toss in the sugar and zest.
  6. Continue until it represents breadcrumbs and then add the egg and bring the dough together.
  7. Place in fridge for 30 minutes.
  8. Roll out and cut shapes using a 2 inch round cutter.
  9. Place on the tray and bake until cookies are dry and slightly coloured (around 15 minutes).
  10. Cool on wire rack.
  11. Mix ¼ lemon curd to 1 cup of pastry cream (recipe in ‘Spread and filling section’).
  12. Sandwich biscuits using a dollop of cream.
Notes
  1. Biscuit flour contains less protein and thus is best for biscuits.
