Almond cream

Almond cream
Perfect filling for tarts.
Write a review
  1. 1 cup almond flour
  2. 1/2 cup castor sugar
  3. 1/4 tsp. salt
  4. 4 tbsp. butter softened
  5. 2 eggs
  6. Vanilla/Lemon or orange zest (optional)
  1. In a double boiler heat butter until melted.
  2. In a separate bowl, beat eggs and sugar until blended.
  3. Pour egg sugar mixture to butter while whisking.
  4. Add almond meal and salt and mix well to combine.
  5. Use the zest or vanilla for flavour.
  1. Can be refrigerated in an airtight container, for up to a week.
  2. Makes about 2 cups.
